Spaghetti Squash w/ Turkey Meatballs

Cut your spaghetti squash this way for longer noodles! Plus it’s just easier to cut than cutting length ways.

See the pretty backsplash my dad has been installing? It’s made their kitchen look SO much better. Brighter and more of a gourmet feel to it.

I feel like I’m all about the veggie pasta lately. It’s just sooo good and it’s good for you so why not!? Spaghetti Squash is low cal, low carb, and low fat which makes it perfect for anyone working on those weight loss resolutions! Plus, just like regular pasta, you can make many different variations of it which keeps it new and exciting.

We’ve been at my parent’s house this week and since they are remodeling the kitchen and I didn’t have access to the stove, this meal worked out perfect because all I needed was the oven! I completely forgot to take pictures of the turkey meatballs, but I’ll share the recipe below. The turkey meatballs had minced zucchini, onion and garlic in them and were baked! So I felt like all around this meal was super healthy (minus the buttery garlic bread and the store bought sodium-dense pasta sauce).

Turkey Meatballs

Baked Turkey Zucchini Meatballs

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Yield: 44 meatballs with sauce
Serving Size: 5 meatballs with sauce; 8 servings

Juicy and flavorful Turkey Zucchini Meatballs ready in just around 30 minutes! Top with homemade marinara sauce for a delicious dinner.

Ingredients

  • 2 pounds ground turkey meat
  • 1 tablespoon olive oil (I used my mom’s fancy Blood Orange olive oil)
  • 3 cloves of garlic, minced
  • 2 large eggs
  • 3 1/2 teaspoons Italian seasoning
  • Salt and ground black pepper, to taste (I suggest starting with 1 and 1/4 teaspoons of salt and 1/2 teaspoon of black pepper)
  • 1 zucchini, finely grated. And then squeeze all excess water out before adding to the mixture!
  • 1 small red onion, diced very fine

Instructions

  1. Preheat oven to 400 degrees (F). Line a large baking sheet with parchment paper; set aside.
  2. In a large bowl combine: ground turkey meat, olive oil, minced garlic, eggs, Italian seasoning, salt and pepper, zucchini, and onion. Using your hands mix the meat mixture until the ingredients are evenly combined; the mixture should be very moist but still hold its shape when rolled into balls.
  3. Scoop two tablespoon sized balls of meat from the mix, roll into a firm ball, and place on prepared baking sheet; repeat with remaining meat.
  4. Place the baking sheet in the oven to bake for 20-25 minutes, or until they’re evenly brown and cooked though.
  5. When meatballs are done baking, add them to the sauce, stir to coat, and serve.

Nutrition Facts: (Based on my estimate on SparkRecipes) Amount Per Serving (about 5 meatballs with sauce) Calories 170.1 Total Fat 2.9 g

Spaghetti Squash

  1. Pre-heat oven to 425
  2. Cut squash in half
  3. Scoop out seeds
  4. Place upside down on baking pan
  5. Cook for 45minutes to an hour, checking to see if they are done. (I cooked two whole spaghetti squash at a time so it took around an hour in my mom’s oven).
  6. Once done, flip back over to let them cool. (about ten minutes)
  7. Scoop out the squash noodles!

Make-up at the Gym. What are your thoughts?

You guys! I was working out at 24 hour fitness the other day – I love doing the Les Mills Body Pump (entire body weight workout) class. It has REALLY helped me to drop some lbs and tone-up super fast!

So if you’re looking for a good class to kick your body in to shape fast I’d recommend checking it out. You can always modify the workout as you need, so don’t not go just because you’ve been out awhile or you feel too out of shape! That’s what this class if for!

ANYWAY in between sets the Instructor started talking about people who wear make-up to the gym. A lot of the instructors do while they are filming. And sometimes it just happens when you are working out after work or something…but she was talking about people getting made-up to come and workout. And she shared a little secret she learned from a co-instructor so that your make-up doesn’t run….

Spray your face with hair spray! Say what??? Yes. Coat your face in hairspray. Make-up wont budge.

Now I don’t wear make-up to work out because 1. my face would freak out and my acne would flare up like CRAZY. and 2. I’m fine with looking like sh*t while I get my sweat on. But that’s my personal preference! I feel like if I didn’t break out so easily, maybe I’d slap on some foundation to cover up my under eye circles. But for the most part I don’t really care because at the end of my workout I’m dripping in sweat and my face is beat red anyway.

BUT I just wanted to share that crazy little instructor secret. In case you wear make-up to the gym and wanted to know how to keep that mascara out of your eyes. Do your thing!

Fitspiration Journaling

In my weekend re-cap on Monday I mentioned that I recently started Fitness Journaling!

I picked one of these up at Target the other day to help me get back on track to living a healthy lifestyle. I gained six pounds while teaching, but more than that, my diet slowly shifted from mostly fruits, veggies, juicing and whole foods to mostly pizza and a lot of fast food – pretty regularly – because it’s mostly what suited my schedule. Waking up at 5, getting home anywhere from 5-7, and living in a different house every week can make routine slightly difficult. Not impossible, I just wasn’t very good at planning ahead!

Now that I feel like I have time to focus on my health again, I thought this would be a good place to start. What I love about this journal is that it focuses on being positive! You might not have a day where you feel that you did anything spectacular work-out wise, but you still log 3 things you are grateful for and 1 thing that you appreciate about your body — EVERYDAY.

We all know that it can be EASY to pick yourself apart, but this journal sort of helps to re-wire your thinking.

“One thing I appreciate about my strong bod today is…”: that it carried me 13,000 steps today and that it’s gotten me through a long semester and MANY many colds.

“I am grateful for…”: A long midday nap, being home and lazy days with family.

Instead of feeling guilty about the lazy days, I can feel grateful for them. Instead of feeling like while I was napping I should have been at the gym, I can journal and plan my goals for the day – however little or big I want them to be.

“My goal to live fit today is…”: Drink more water!

The journal also gives you a motivational quote and a fit-tip every day. Sometimes the fit-tips include a simple, easy and healthy recipe, like the one pictured above!

“Commitment means staying loyal to what you said you were going to do long after the mood you said it has left you.”

That quote slapped me in the face! Haha. How many times have I said I’m going to start being healthy and been in the same room as an apple pie and then forgotten all about being healthy ten minutes later! Too many.

Basically I LOVE this journal. I’ve always had a weird thing about needing to write things down or write things out. For some reason it just helps me hash out my thoughts or my goals and makes things more solid. So I figured fitness journaling would be right up my alley and so far I love it!

Weekend, Weddings, and Workouts


  
  
  

You guys! I had such a busy and great weekend.

Got to visit family and my chef cousin showed me how to make some wine gummies that would be AWESOME for whatever holiday partie’s you have coming up. I’m going to share the recipe soon because they were really good! And could be really fun if you have super cute molds to pour it into. COMING SOON so I’ll keep you posted…

Then we spent some time with our really good friends from college because two of our friends got married!! The venue was quaint and Kaylan, the bride, was GORGEOUS. And it was just so good to see everyone because I had some of the BEST years of my life with these people and I love them. Always a good time.

We had to leave the wedding a little early because I had to drive Sam to the airport…he had to leave me for work this week 😦  So I’m currently staying with my parents and sitting here beside them watching the Voice, drinking a little wine and typing this.

OH, I also did the first day of The Bombshell Body Guide by Lauryn Evarts (you can find the link through her blog) on Sunday, and I am super surprised how sore I am today!! I am SO sore. But like a good sore, you know? I’m really excited to do day two tomorrow! Check out Lauryn’s guide. I really think I’m going to see some good results over the next several weeks. And the awesome thing about the guide is that it’s convenient. I literally worked out in my bedroom. And it was super quick but I really worked up a sweat…it was actually hard to finish the last set of everything. So if you’re looking for a good workout program, check her’s out and see if it could be a good fit for you!

Just do it.

I just finished my four mile run! Walk-run-walk-run-walk-run if I’m being honest. It’s been what seems like a year and probably has been since I last ran consistently and I was definitely winded! 

I really didn’t even want to go. I almost didn’t because an after work meeting went longer than expected and it would have been SO easy to just GO HOME after a 13 hour day, it was super tempting…but I’m just so tired of feeling tired and out of shape! You know?  

The first few days of anything new are always the hardest but I’m definitely looking forward to the high, endorphins and energy that you get from running, especially once you get in a good groove.

Let me know how your first day went if you’re running along with me! Tomorrow we do three miles!! And then we have a cross training day on Thursday. ((Find me on Nike+ : Amanda Bounds and friend me so we can follow each other’s progress on the 10k intermediate plan!!)

So I’m literally typing this up as I walk out of the gym… Gotta multi task because I feel like I have no time for anything these days. Sam and I have also been trying to limit phone and computer time at home because they consume our lives! Anyone else feel this way?

I’m on my way to pick up some food and probably binge watch some TV with Sam. Haha i don’t know why substituting TV for phones and computers is okay, but maybe it’s because we are doing it together and our attention is focused on the same thing for more than a few minutes and with no distractions. TV has become like the old school days where families used to sit together in a living room around a radio because TVs weren’t invented yet!

Anyway hope everyone’s Tuesday’s were good!

Running with Nike + (week one)

Hope everyone had an amazing weekend!! I had fun celebrating Sam’s birthday with my family on Friday at Buca di Beppo!  

  
Lots of good food and drinks for Sam’s birthday. We love the family style serving at Buca do Bepos, it’s always really fun.

And also had tons of fun throwing a bridal shower this weekend that I had put so much time into and the bride LOVED it. So I’m really happy and excited about that. I’ll be sharing it all with you in a post this week!

  

Today I’m sharing with you Nike’s 10k running plan! Not fully, I’m providing you the link because it’s not my content, and I didn’t make the plan. I’m just sharing it! What you can do if you haven’t already is download the Nike+ app on your phone or sign up for an account on their website. And then friend me so we can follow one another’s progress! My name on Nike+ is still under my maiden name so look for Amanda Bounds 🙂

HERE is the link to their 10k plan. The easiest way to access the plan is through their app, so I would definitely download that to keep track of your runs!

Today is an off day. Running starts Tuesday (tomorrow), 4 miles, so rest well today and mentally prepare yourself for tomorrow!! Resting is just as important in making progress as the actual training time, so get ready!! Also make sure you are eating right!! Stay hydrated, eat complex carbs – lots of whole grain whole wheat and veggies, good fats like avocado and nuts and make sure you get your protein!

I’m super excited to get back into running. It’s definitely a way I release stress and a good way to work on challenging myself. I grew up playing soccer pretty intensely and I feel like running brings back my competitive side…with myself. I love setting goals and trying for faster paces and a faster times in my miles and even longer and loner distance. And it might sound weird but I find running enjoyable! Once I get back into at least, the first few days are always ROUGH, but once you push through the first of it, you’re golden!

SO I hope you friend me on the Nike + App so we can embark on this running journey together! Once you sign up on the app, find the coach link and then the 10k intermediate plan. Can’t wait to run with you tomorrow!!

Our Experience with Restore Cryotherapy!

Let’s talk about something cool!

So last weekend Sam and I had an awesome opportunity to try out Cryotherapy here in Austin at Restore Cryotherapy!

What the heck is Cryotherapy!? That was my first thought. I had no idea what it was before asked to try it out, so the first thing I did was google it and then thought ‘oh I’ve seen the Dancing with the Stars people who I follow on Instagram do this!’ Haha

And no, cryotherapy has nothing to do with crying unless that’s how you respond to being really really cold! I just learned that Cryo comes from the Greek word (κρυογόνο) meaning to produce low temperatures! (Anyone else think of My Big Fat Greek Wedding when I said that? Or bible class?)

So cryotherapy is, simply put, the use of low (in this case extremely low) temperatures to treat, aide, or benefit the body.

SO what Sam and I did last weekend after a trip to the gym was spend 3 minutes in a chamber at below -150 degrees Celsius ( – 238 degrees Fahrenheit)! Cool right?! No. Cold. Very very cold! But actually it wasn’t so bad. I’d do it again. If only for the sole purpose of burning between 500-800 calories per session?!?!? I’m down with that. But there are other benefits too!

What are the benefits?

A commonly noted benefit is an immediate release of endorphins directly after the therapy that takes away from any pain your body may be feeling that also leaves you with a lingering high from the experience.

You can also expect to experience relief from stress, insomnia, and skin related issues as well as a decrease in inflammation and soreness of muscles and joints (which is why a ton of athletes have started using this therapy as an alternative to ice packs and ice baths).

The cost per session is $35 for a first session and $55 after that and we were told that it’s good to do the therapy at least three times to really see the benefits of this kind of therapy. My first thought was yeah, well, you want our money so of course! But in all honesty it was such a fun experience and I was definitely a little more giddy and on an endorphin high afterwards!

They had us go into a room and get butt naked! Except for some socks and mittens that they provided to protect our ligaments from acute frostbite. Guys have the option of “a third sock” or going in their underwear but ladies literally go sans everything.

They provided us robes which we took off once we were in the chamber. They raised the chamber to where our heads were exposed in the room and not being blasted by cold and then started the process of turning us into human popsicles. Kidding, kind of. Your core temperature stays relatively the same but your skin temperature drops about twenty degrees or more.

I literally couldn’t keep my body from shaking I was so cold but I got used to the feeling pretty quick. It was initially super cold once it cooled down all the way but then my body just felt kind of numb to it.

After I got out was the best part because the endorphins literally did kick in, plus your body feels the afterburn, which doesn’t burn at all, it’s more of a warm tingly feeling all over and it feels GREAT!!

When Sam went in he didn’t seem to shake as much as I did. In fact his reaction was kind of the opposite of mine! I froze and then got all warm and tingly and I expected Sam to have the same experience and reactions and he didn’t! He seemed a little underwhelmed but I think he might have been playing it cool 😉 He doesn’t know if he’s completely sold on the whole thing but he said it was a fun experience!

MONDAY AWESOMENESS

MONDAY.

I seriously know exactly how the kids in my class feel when they come in Monday mornings crying… I’d be crying too if I didn’t have to look put together in front of them!

I want to be in bed still.

We got these adorable pillow cases from World Market this weekend and I LOVE them! They say bonne nuit on the opposite side.

I want to wake up late, drink my coffee leisurely and eat some pancakes with Sam and our pups.

They’re SO CUTE.

I totally get it!

Nevertheless I’ll try to get through my Monday with the best possible attitude. (And a BIG shout out to my pastor and Austin Christian Fellowship Lake Travis for prayers and support! Because they are NEEDED.)
